Activities and Vision
Oiwa Shuzo Honten is a sake brewery based in Kofu Town. Its history has continued from its founding more than 140 years ago, and Mr. Oiwa, the 5th generation owner, currently works as the head brewer here.
In the winter of his 40th year, in order to protect the brewery which was at the time without a head brewer, Mr. Oiwa decided to take on that role of brewing sake himself.
The instigator of this resolution was Kitanizawa Stream, where pure meltwater flows.
“No matter what, I have to brew sake.” This idea is still the foundation of his sake brewing.
The water that flows in Oku Daisen is soft water. The sake brewed using rice raised with this water in the natural weather conditions of the area is different every year. The brewery’s sake, for which “every year is the first year”, is not only tradition, but also the way of life itself for a head brewer who continues to challenge himself.
For Mr. Oiwa, “local sake” is making sake, brewed with local rice and water, that local residents will be delighted with.
However, each glass of sake, as something that reflects the blessings of Oku Daisen and the lives of the people there, shares this with people outside of the area as well.
The flavors nurtured by the natural surroundings of Oku Daisen help people, including those who visit here from other areas, understand that “this is a sake that could only be created in this place.”

The 5th generation owner of Oiwa Shuzo Honten and current head brewer. To keep the brewery’s more than 140-year history alive, he decided to take on the role of head brewer and make sake here at the age of 40.
Making the most of the water and rice of Oku Daisen, and connecting with the natural climate, he brews sake characteristic of the year in which it was brewed.
With “every year is the first year” as a creed, he continues to brew sake that maintains a close connection to the region.
